For instance does Hidden Album ensure that apps (like FaceApp for example) do not get access to photos in this album when you grant them access to your Photo Library?
I think no, right? If anything what it does it provide an album that highlights all your sensitive photos.
There is no security at all with hidden photos. They just reduce visual clutter. Your "sensitive photos" are not an issue that Apple engages with.
