Did you just buy your Apple Watch? If so, you have 14 days to return it.

watchOS 6 requires an iPhone running 6s, SE, 7, 8, X, XS, XR, 11 or 11 Pro
Could be a bug. I would click on the "Contact Support" link at the top of this page and chat with an Apple Specialist.
Did you unpair your Watch to update it to watchOS 6? If so, thats why.
