When sim removed from my old apple iPhone is all info erased from that phone?

Buying a new iPhone so when I remove sim from old 5s iPhone will all information be removed from old phone?

No, it isn't. The SIM in an iPhone does not contain any data except from your cellular carrier about your account. If you want to clear your iPhone of all data, which you should before you sell or give it away, follow the steps in this support document, What to do before you sell, give away, or trade in your iPhone, iPad, or iPod touch - Apple Support
