I was setting up my replacement iPhone 8 plus and it had first said the software wasn't able to restore the old back and I set it up as a new device and I can't get my recent back up that I restore. I do have some stuff from my iCloud but now I have a whole new phone. Am I able to redo it or get my old backup that I recently did right before setting up the replacement device?

You can erase it and restore from backup. Before doing so make sure you are updated to the latest iOS.
