When I listen to a playlist in my iTunes library with shuffle enabled, it plays songs in the order in which they appear on an artist's album, rather than more randomly. For example, if I have 5 songs by Artist A on a playlist, those songs will play consecutively even if I have shuffle "on." That was not the case in the past.

Sounds like your shuffle control is set to shuffle by albums. Change it to shuffle by songs, as shown below.
