Creating a book in pages

When I get up a template for creating a book the text is in a foreign language. How do I change it to English

The text used is Latin, and in particular, Lorem ipsum. It is filler text in Placeholder text fields in the template. Once you open a new document based on that template, you click on the Latin text, and replace it with your own English text.
