I have a iMac Mid 2007 upgraded up to El Capitan.
I have upgraded the Memory to 4GB and it has over 80GB of storage out of 248GB to meet requirement.
Most of the Apps have the 64 bit option available as well.
Can't find the option to download and install the upgrade to Catalina. Any options ?

I see the upgrade button on the Apple store or System Upgrade but I can not upgrade. It tells me I can not upgrade on this computer. I checked the requirements and I should be able to. However, I do not see the iMac 2007 in the list of Macs on the link you provided.

El Capitan 10.11 is the highest macOS, that your Mid 2007 iMac can run.
As noted, you cannot run Catalina. Your iMac doesn't meet the most important requirement which is an iMac from 2012 or later, required to support Metal graphics.
So it seems I would have to change the hardware requirement and upgrade the graphics card and the fan for option or upgrade the hardware to 2012.

You can't upgrade it. You would need a newer computer.
ok so no point in upgrading the hardware for graphics card it still won't install.
