I recently learned that if i keep pressing on the FINDER icon it will show me the list of folders, but some folders that showing are not on the sidebar.
I am wondering why only these folders are showing not other folders in my Documents or Pictures.

Recently visited files/folders. This is different then sidebar
You can drag about anything into the side bar, even if it is not part of the default options in
Finder >Preferences>Sidebar

Those are recently used folders, not what is in the SideBar.

If you don't want to open a recent folder, or open a new Finder window, or create a smart folder, then there is no point for you. Don't bother doing it.
