Speeding backup from iPhone 7 to iCloud.
Can I exclude photos from backup, they seem to be backed up by default.

Settings, tap your account at the top, then tap iCloud, then manage storage, then backups, pick the device and finally choose data to backup.
Note that if using iCloud photo then photos are not part of your backup to begin with. And if not backing up your photo library, make sure to transfer them to a computer or somewhere for backup and safe keeping. Otherwise, if anything happens to your device, you may well loose those photos.
