I’d like to change my Apple password. Will Safari suggest a new password and store it in Keychain?

Yes, if you're using Safari browser with Keychain turned on, it will auto suggest a strong unique password for your account. I would still recommend either writing it down or finding some way to store it, just in case you need to access it later.

You should also consider utilizing the two-factor authentication and recovery email functions, in case you every find yourself locked out for some reason.
