We have 3 phones on one Apple ID. We have new phones on the way and time to separate the phones to their own apple id and then use Family Share. How do I transfer old phone information, apps, contacts, etc. from an old phone. with same apple id, to a new phone with a different apple id?

Copy the data between iPhones using "Trabsfer from iPhone" before logging in to the new apple ID. Once you log in, it will start updating the local data to the cloud.
