Unlinking iPhones

We have two iPhones - and they are linked. I realize this is because they are both under the same Apple ID and we need to recreate a second one. However, I did have the settings adjusted to where we wouldn't get each others texts/calls etc. However, something in the phone changed and it's happening again.

So - my question is - if I create a new Apple ID - what happens to the data that is already on the phone and backed up to the existing iCloud account?

I want to make sure that we're not going to lose anything. I know there is a setting that says to "deregister" the phone - but if I do that - deregister from what? I want to make sure that I'm not turning off the phone from our cell service.

iPhone 7, iOS 12

In accomplishing your goals, this is as good as you can do.

See How to create a new Apple ID https://support.apple.com/en-us/HT204316  and

See the data implications below.

Some of these things may apply even though not changing an Apple IDWhat to do after you change your Apple ID or password https://support.apple.com/en-us/HT204071

Keep in mind that some things available under a first Apple ID will not be available under a new Apple ID. For example, you won’t be able to transfer anything purchased from the App and iTunes Stores to the new ID. And, there are other issues to be addressed.

And see what Eric Root says on this matter here  https://discussions.apple.com/thread/251483565 and

what Winston Churchill says about it here: https://discussions.apple.com/thread/7452747

But, despite any other data loss you can set up family sharing between the IDs to share purchases made with them. See:
