2020 iMac downgrading From Catalina to Mojave

I am considering getting a new 2020 iMac. I would still like to continue to run Mojave as one of my applications does not function well with Catalina. I would restore the iMac from a Time Machine backup from 2017 iMac. Does anyone know if this possible and would it as easy as restoring the system on my current iMac from a Time Machine backup?

Unfortunately, that is very likely "no" - since 2020 iMac shipped with Catalina, can not run earlier versions of Mac OS (such as Mojave, High Sierra .. etc).
