Before doing this, you must backup your data.
One thing you can do, as long as your Mac is older than the release of Catalina, is make a separate partition with Disk Utility to install the older operating system. command-option-shift-R lets you install the first OS that came with the computer on bootup.
Do you have a Time Machine backup to Restore to/from?
