Just updated from Mojave to Big Sur and I find the UI harder to read than before. Where can I make the UI text a litte larger? Couldn't find it in the accessibility settings.

I've had similar problems and this is how I minimized it:
1 - user Dark Mode
2 - enable Reduce Transparency and Increase Contrast in the System/Accessability/Display preference pane.
3 - set the Menu bar to large in the same preference pane.

They won't unless you tell them via Feedback - macOS - Apple.
You can hope that Apple realizes what a UI calamity they have caused, and resolves it in the next point update to Big Sur.
