It will go away whenever you stop using an app that has access to the microphone. And when you start using an app that uses the microphone, it will reappear.
That means the microphone on your device is active.
When you terminate the call, it will turn off (unless another application is using the microphone).
You can stop seeing it by never using an app that needs to use the microphone, including phone calls. You are correct it is only there since the update, as it is a new security feature in iOS 14.
