Make sure you backup the device before taking it in. If you want, make a fresh backup, then erase it and set it up as new, so just bare iOS. Don’t sign into iCloud. That way they can replace the battery and check function on it without any of your data on it.

Then when you get it back, erase it, and restore your backup and sign into your iCloud account to get everything back.

  1. They can but they don't.
  2. Because they have to check the battery to make sure it installed properly.

If you don't want them to see this backup your iPhone, sign out of iCloud, iMessage and FaceTime then got to Settings > General > Reset > Erase All Content and Settings. After that set it up as a new device (not from your backup) and set a simple passcode.

Can they access your data, yes, then can. Will they and do they, that is another questions, however given the number of devices they need to work on, they do not have the time, nor are they interested in accessing your data. They need the iPhone opened so they can test the phone after the battery has been replaced. They cannot do that while it is locked.
