How do you shut down apps running in background?

Which model of iPad Pro?

If it has a home button you can do double press on the home button and then swipe the apps away

If it doesn't have a home button then swipe up from the bottom of the screen and then swipe the apps away

You can do either of these with any iPad running iPasOS.

Saves wear and tear on the Home button!
