I wish to place an order for a new iPad and trade in my old one. Delivery date will only be on January 31st., but the old one has to be returned in 14 days. I wish to transfer all info from the old to new. How can I do this if I have to send in my old iPad before I receive the new one

The 14 day transfer period starts after you receive the trade in kit and they don't ship that to you until they ship your new iPad. You should have plenty of time to make the transfer. Other information is in Apple Trade In - Apple
