Apple TV downloads
If I have a 7 day free trial on Apple TV and I download a whole bunch of free movies and tv series, am I still able to watch the downloaded items after I cancel my free trial before they charge me?

The subscription is for Apple TV+, the streaming service featuring Apple Originals. Other content in the Apple TV app is not freely accessible with this subscription, e.g. iTunes Store movies and TV shows will have to be paid for separately.
Apple TV+ downloads are valid for 30 days, even if you stay subscribed. Possibly the online checks (‘phone home’) may invalidate those sooner when no longer subscribed.
