I attempted to open Preferences in Mail after upgrading to Big Sur. The window must be at least 50 times the width of my screen. I have to drag the window to the left or right to get to the center menus or the controls on the left. How do I correct this?

This is an issue most likely related to your Signatures. Delete some of them until the issue is resolved.

It had all of my signatures, three times each. There was one that had the title in html, which I did not add.
That did the trick!
