I have a MacBook Pro 2019 and want to connect two LG 5K displays with thunderbolt 3 cables. I know to connect one to each side of my MacBook Pro but do I connect to the power usb-c port on each display?

You Mac will never overcharge.
If there is more than one power supply to the Mac it will choose which one to use.
