Can I choose specific applications and files when migrating from an old Mac to a new Mac? I am going from a MacBook Pro Mid 2010 to an M1 Mac Mini.

If you want more granular control than all Apps or no Apps, then MA would be the only arduous choice.

Not using Migration or Setup Assistant, with much effort you could from Time Machine.
