saved a bunch of photos on an external hard drive (photos 5.0). Have since updated my Mac. tried to access photos from said hard drive but can't because I am running on photos 6.0 since the update. ("You can't use this version of the application "photos" with this version of macOS.") suggestions?
When you say you saved photos on an external drive, what do you mean. Presumably you didn't copy the photos app to the external drive, because the app doesn't contain your photos.
Did you copy the library to the external drive, or individual image files. Where are you finding the version 5 app now.
You will need to use the version 6 app on Big Sur. you can still open libraries created with version 5 using version 6 of photos.
