I was able to easily connect 2 displays with my M1 Mac Mini.
I was able to easily connect 1 external display AND SideCar with my Ipad USING my Macbook Air M1
HOWEVER For the life of me, I cannot set up 2 external display monitors with my laptop... the third monitor simply does not get recognized. I have tried using DisplayManager also does not work. WTH Apple?

USB-C cables come in different varieties. The thinner ones can't transmit video.
Furthermore if adapting to HDMI or Displayport, you should use a USB-C PD 100W pass through port based adapter or better.
The ones with no power pass through for your Mac's power often have insufficient power to convert the video signal.

Working as designed.
IAW the specs, the MacBook Air M1 only supports the use of one external monitor.
