You don't.

Pages uses Folders, but does not contain Folders.

You create new Folders in Finder., but you can open a Finder Window from Pages to do that.

Click on the name of the open document, shown in the bar above the document window.

This will open a small dialogue containing the current filename, a box in which to insert searchable tags forthe file, and a pop-up menu showing the currently selected destination for the file.

Click the Where menu to show the immediate choices, and if one of them fits, choose it as the file's destination place. Otherwise, scroll to the bottom of the list and choose Other to open a Finder window.

The Finder window will open to the current destination folder (Shared Docs), shown in the dialogue above. The redacted view below is of the left side of the Finder window that opens.

The Folder name, at the top of the window, is a pop-up menu, allowing navigation to a different folder, if you do not want your new folder to be contained in this one.

The list below is of files (white icons) and Folders (blue icons contained in this folder.

If you want to save the new document (or your new folder) to be placed in any of these folders, double click on the folder name or the icon for that folder name to open that folder , then create the new folder by clicking the New Folder button at the lower left corner of the Finder window.

If you want the new folder to be somewhere else, navigate to and open that location, then create the new folder.

Click on the New Folder name to select it, then type the new name for that folder.

Open the new folder, then click the Move button (lower right of the dialogue) to move the current document to that folder.

The new folder will become the default folder into which new Pages docs will be saved.

Regards,

Barry

PS: My version of Pages is likely older than yours. Your Finder window and your Pages document may vary in appearance, but should contain the same or similar elements.
