1) Is there a way to have the Piano Roll window take up the whole screen/full screen?
2) Where is the scroll preferences located? I want to see the midi notes hit the keyboard so I can see which notes are being played on the keyboard (In the Piano Roll Window).... Is this called scroll in real time?

Ah, I see, not sure on what version the Open Window CMDs changed? nor what version Gary has?
But yes, I am on Logic 10.3.2, totally stable on El Capitan, though it would be nice to have the new features I agree!
One of the reasons why I never just put the keystroke. Apple have always changed the defaults between various versions and it's very annoying.
Eriks method of screenshot plus keystroke is as good as you can get I reckon. I sometimes write the path to the menu option too. Helps avoid confusion.

On your computer keyboard just press CMD 4
That will bring up the full screen piano roll and the midi keyboard on the left.

I guess it may depend on which version of Logic you have?
I have the latest, 10.6.2. You still on 10.3.2? You are missing out on many new features.
It is more of which key commands are loaded. As you can switch the key commands yourself. So not really the version of logic
But those are the defaults for those versions though.

Apple changing the defaults between ANY versions seems crazy!
