How to reset my Apple ID?

So I’m trying to to reset my Apple ID as the current email has been cancelled how do I do this when it won’t let me do anything because the old email is still linked to everything

You can use the following instructions to change the email that you use as your Apple ID even if the old email is no longer functioning for email: Change your Apple ID - Apple Support
