I need to recover all the emails and text I have deleted since January 1,2021. How can?

You can contact your email provider and see if they have any of your emails you've deleted throughout that time, but don't be surprised if they don't. The concept of deleting things is to delete them. Backups are incremental and overwrite previous backups along the way. The chances of finding emails in a backup from that far back are not likely if at all.

For messages, if you sync messages with iCloud, when you delete they are gone with no way to retrieve them at all.

To see go to Settings > Your Name, iCloud, etc.

Tap iCloud

Are Messages turned on (green)?

If they are, when you deleted any messages they were deleted, permanently and there is no way to retrieve them.

If you did not do an archived backup then they are gone.
