Watch suddenly stopped linking with my phone

My watch suddenly wasn’t linking with my phone. I tried everything, and finally unpaired through the Watch app. Now it’s not paired according to my phone, but the watch still has all my info, gets my texts (when on Wi-Fi), etc. What do I do to get them linked up again? I really hate to completely reset my watch.

Phone is a 12 mini running 14.7.1

Watch is a series 4 running 7.6.1

I restarted both, disconnected Bluetooth and reconnected, finally unpaired.

No real error messages, just that it can’t pair the watch to my phone.

It was paired to my old iPhone 7, but switched to the 12 mini when I got it several weeks ago and had been working fine with it. Checked that phone and it is not paired to it.
