I want to buy an apple watch and my question is if I can use it in my country ( in Europe) with a different provider.

If it is a GPS+Cellular watch and you want to use the cellular feature, then make sure that you have an eligible cellular service plan with a supported carrier. Your iPhone and Apple Watch MUST use the same carrier, and you must be within your carrier's network when you set up cellular on your watch. For more info, see:

Otherwise, if is a GPS only version, then it doesn't matter.
