Accessibility Issue: How to customize toolbar back to silver for legibility?

With yesterday's Safari update, the toolbar reflects any website's color scheme, making it very difficult to see/read bookmarks in the toolbar when it is black, green, etc.

The traditional silver toolbar was the easiest to read from, and best to differentiate interface from pages. Why would this feature go away?!

Web developers can now override Safari 15's dark toolbar and tabs with an arbitrary color selection and there is no means that I am aware of (not in Safari 15 preferences) that can prevent this other than offending website avoidance.

*CSS-TRICKS and the Living HTML standard both discuss this new theme-color web design feature that is not limited to Safari 15.

Expect this theme-color capability to be horribly abused.
