Why with Appletv0ne do I have to pay to watch individual shows? I think it’s overkill, and just looking for money. This is an Apple TV show I want to watch…

With Apple One, you get a bundle of subscriptions, that includes Apple TV+ (note the Plus). For Apple TV+ content, you get full access without additional payments, when signed in with the Apple ID account that has the subscription.
Other content in the Apple TV app, that which is not marked Apple TV+, is not included in the subscription, and will have to be payed for separately. That would be exactly the same without Apple TV+/Apple One subscription.
