Where can I find my Mail folders in Big Sur?
I hope that I can restore these folders from a Time Machine back up.

NB I think I found the folders but in my Finder I need to use the Option button to open that Library and I cannot do that when I open my Time Machine.

From the Finder use>
Command Shift H
Command J
I was replying to the OP that said:

This tells me that he was starting Time Machine elsewhere - perhaps in his home folder - and then trying to get to his Library from there, instead of opening the relevant folder in the Finder and then opening Time Machine.
Thanks to the suggestions I received, now all the Mail folders of the relevant account are restored in my Library. But they still don't appear in that mail account in the Mail app.
(I suppose this is off topic but in case anybody knows how to 'revive' them.... )
You need to export this folders to your desktop then within mail import them. They will show up at the bottom of your mail folders and then you can open and move them back into their correct mail box.
It took a while but it's solved :-)
To reach the Library when in TimeMachine, I could use SHIFT + CMD + .
As for replacing the mail folders:
I should NOT recover the mail folders from my TimeMachine back-up but instead of that I had to copy the mail folders to my desktop and then in the Mail app import those folders. That worked great (although it took a while...)

In addition to what the other respondents said: you do not navigate to these folders inside the Time Machine backup.
You navigate in the Finder, and then you choose Enter Time Machine.
Another way:
Open TM
in the go to folder type ~/library/mail/V8 and enter
This should take you to the mail folder directories
Not sure what you are saying. I go directly to TM all the time and then back in time to my user/library/mail/V8 and works fine.
