I’m trying to pair my Apple Watch to my new iPhone but it keeps trying to get me to sign into a really old Apple ID…. How do I change it to my current one?

My new phone is asking me to sign in with an old Apple ID and password that I deleted three months ago. Therefore, I can not complete the transfer from my old phone to my new phone. How do I remove this old Apple ID? I tried the suggestion to go to iTunes and App Store in setting but they don't exist in my settings. I'm thinking that I need to return my new phone and just keep using my old phone. Any suggestions?
You have to sign out of the old ID before you can sign in with the current ID.
