Ios 15.0.2 Notes are invisible when typing

On my iPhone 12 Pro Max (but not on my iPad), while running ios 15.0.2, when I try to enter a note in the Notes app, it's invisible. When I go to the Notes list view, I see it. But when I click into it, it's invisible again.

What's going on?

It may be related, on the ipad the background goes to black. On my phone it's still white. Maybe the text is white on white? I don't know how to adjust that.

To be clear, the notes are THERE, but invisible in the clicked-in view
