Clicking on email link in Safari will open outlook on Google Chrome, I wish it would open my mail app.

Open the Apple Mail app. Goto Preferences > General and see if your "Default email reader" is set to mail.app or not.

Also, in Safari, check your extensions to be sure that the Google, or any other, mailto extension is not installed.
