The current version of Safari on Catalina is v15.1. And as Catalina will be supported for another year by Apple, Catalina will receive Security and browser updates until Fall 2022 when macOS.next is released.
The only way to update Safari is to upgrade macOS.
Then how do I upgrade macOS
