I backed up all my data, signed out completely.
I then restored my iPhone to factory settings.
When I signed in, some data which I backed up could not be retrieved.
Please help, how can I retrieve this data?

What you're describing isn't restoring from backup, but syncing to icloud.
You need to do this Restore your iPhone, iPad, or iPod touch from a backup - Apple Support
