I was setting up my daughter’s new iPad but it linked to my phone. Now it has all my info & contacts, notes, photos. How can we customize it just for her?

You cannot use your Apple ID. You need to set it up with her own Apple ID. If she is under 13 years of age, then use Family Sharing. You will probably need to start over and set it up as new. Here are the support documents you need.
