How do I keep my name an number private when making a out going call

Settings > Phone > Show My Caller ID
Turn it off. You name is never shown in your call, it is summoned up on the receiver's phone if their phone can link the calling phone number to an entry in their contacts list. Obviously if you have Show My Caller ID set to off then it can't do this.
Be aware that your friends, family, and other regular contacts won't be able to identify your calls to them either.
