Application Startup Issue

I have several applications that I use frequently but don't want to remove them from the dock. However I don't want some of them opening on startup. I have tried to right click to remove the checkmark next to "open at startup" but the check mark is still there. Moreover when I shut down I don't check the box that says "open at startup." Again today when I started up I had 8 applications merrily bouncing up and down in the dock. I am running macOS Monterey 12.1. Is there anything else that I can do other than removing the applications from the dock ?
