Notes -change default Font

I'm still running High Sierra and I'm using Notes version 4.5

I'd like to change the deafult font that now is an awkward System Font. (By the way when I used El Capitan the defaul font wasn't the System Font)


I can change the font for each single note of course, but I'd like to change the default font.


I presume that this is possible in newer version of Notes, but what if I want to change the font while I'm still using High Sierra?

Actually it's not possible in any version of Notes including Notes 4.9 included with macOS Monterey.
