If I want to access old iMessages is there a way to access and print them out?

If the messages are no longer on your iPhone, there is no way to access them. Also, there is no native way to access messages on your device to print them. You can take screenshots of messages and print them that way, or you can invest in 3rd party software for your iPhone to access your messages that way and print from there.
