IOS mail app and my new Yahoo mail app...
Now that I have these 2 apps on my iPhone, can I delete the IOS app and
use only the Yahoo mail app? Also if I do that, it won't delete the
email from the Yahoo app correct?

You can delete Mail app without affecting Yahoo mail app
You could also just remove unwanted accounts in Settings, Mail and turn off Mail in Settings, your name, iCloud
