I have all my contacts in my Google account and I have a bunch of
Starred contacts. I can sync my contacts from Google to my iPhone SE 3 gen
fine, but the Favorites list is blank. Is there a way to get Google
Starred Contacts to display as Favorites on the iPhone? Thanks?

There is no automated function you need to add them manually in an iPhone individually.
Add a Favorite
You can add VIP contacts to your Favorites list for quick dialing.
Select a contact, scroll down, then tap Add to Favorites.
Calls from these contacts bypass Do Not Disturb (see Turn a Focus on or off on iPhone).
