I was informed that my dvd ripping capability through PAVtube won't work with my new operating system because it needs to be updated. How do I do that?

Based on their website http://www.multipelife.com/dvdaid-mac it appears that they don't have a version that will run on current macOS versions (and appears they haven't done any updates since 2015).

or you may want to go to Apple menu > App Store and search for a 3rd party app.

I use handbrake. it's totally free and seems to work really well. I haven't had any issues yet.
