IOS 15.7 & IOS 16

I updated my iPhone X to iOS 15.7 by mistake and it no longer shows an option to upgrade to iOS 16. the software updater on phone and on computer both show iPhone is running the newest version of iOS and no other updates available.

I think the option for 16 will eventually show up, way down at the bottom of the Software Update screen for some reason. I didn't see it after a restart, waiting until the next day, or even after restoring from a backup.

I did see it after wiping the phone to factory settings and setting it up fresh without a restore. Now that I'm on 16 on the phone I should be able to restore my previous back up. Make sure you have a fresh backup, erase all settings, upgrade to 16, restore from backup.

I deleted the IOS 15 Beta profile and the iOS 16 update appeared

Yes you can, or wait A few hours and download iOS 16.

What model is your phone?

If it's a 7, than15.7 is the highest you can go.

I have the iPhone 8 Plus and I upgraded to iOS 15.7 a few days ago and it says iOS 15.7 is up to date in Software Update. How can I update to iOS 16?

Please be patient. Millions of users are all trying to update at the same time. It might take a day or two before the update appears.
