I changed carriers and took my phone number with me. In the new carrier they gave me a new SIM with a temporary number, while the process of changing my number from one carrier to another took place. I have my usual number, but the SIM still shows the temporary one. How do I change it?

Only your new cellular carrier can assist you with this. If they gave you a temporary number to use while they are working on getting your old number rolled over, you will just have to wait for them to do so. There is no way you can change it.
Ask them for a new SIM card. Either way, you will need to contact them so they can help you with this.
