I purchased a new iPhone (14 Pro - late September) but it won't be delivered until late October. Can I still request for a trade-in towards the new device, or a "regular" trade-in for a gift card is only option at this point?

Without the assistance of Apple, your options are accepting a gift Card, or cancel the order and re-ordering with the trade-in. Or contact Apple, and ask if they can adjust the payment processing.
